Ingredients:
- 3 cups broccoli florets
- 2 cups zucchini
- 2 cups spinach
- 2 cups kale
- 2 tbsp olive oil
- 2 cloves garlic
- 1/2 cup onion
- 3 cups vegetable broth
- 1/2 cup full-fat coconut milk
Instructions:
- Cut and dice veggies
- Put soup pot on medium heat
- Sauté onion and garlic until translucent
- Add in broccoli and zucchini and sauté for a few minutes
- Add kale, spinach, and veggie broth, then stir
- Cover and simmer for 15 minutes
- Place contents in a blender then add coconut milk
- Blend until smooth
- Season with salt and pepper
- Serve garnished with dill and a little drizzle of coconut cream
